Pecans, dates, and chocolate combine to make a tasty and filling treat that everybody will love. At our house these go fast, so I hide some in the freezer in case some “mysterious little birds” finish them all. Ahem. Now that my hiding place has been published on the internet, I need to find a new one.
But seriously? It’s incredible that I can make a snack this healthy that disappears in two days flat. Unlike a lot of energy bites I’ve tried, these have the fudgiest texture; they’re silky smooth and chewy, which makes the nutty chocolate flavor just that much more darn incredible.
In 2016, I am focusing on simple, unrefined and easy-to-make foods. It’s a game changer to have nourishing food available any time I need. Since cutting out processed foods, my energy has been through the roof.
These fudgy pecan bites are as simple as it gets: process the pecans, then add all the other ingredients and whirl until completely smooth. Then attempt not to eat all the dough before rolling it. Also, find a good hiding spot.
I rolled these in cocoa powder, but while I like the bitterness in contrast to the sweet inside, that’s not everyone’s cup of tea (bonus: it helped slow down the number of these that mysteriously disappeared while I was gone). They’re also lovely rolled in hemp seeds or finely chopped nuts, topped with flakes of sea salt, or just plain.
- 1¼ cup chopped pecans
- 12 medjool dates, pitted
- ⅓ cup cocoa powder
- pinch salt
- Place pecans in food processor and grind into a fine flour. Pecans will form a smooth flour but will not quite reach the nut-butter stage.
- Add in other ingredients and process until completely smooth and fudgy.
- Scoop out dough 1 tablespoon at a time and roll into balls. Place on a plate covered in parchment paper and refrigerate for 3 hours or until completely firm before enjoying.
